How to Maximize Your Keto Energy Bites Experience:
- USE CASHEW BUTTER: We recommend a cashew butter because it’s the creamiest of the nut butters. Our favorite is Artisana Organics Raw Cashew Butter. While peanut butter or almond butter could work, they tend to have a stronger taste, which will change the flavor.
- GO NUTS: If walnuts aren’t your thing, cashews or almonds are a great alternative. Just note that cashews and almonds both take a bit longer to break down in the food processor so it may increase the recipe time.

Instructions
Add walnuts, shredded coconut and protein powder to the food processor and pulse until a fine mixture is formed.
Add the cashew butter, Creamy MCT Oil, peppermint extract and pulse until well combined.
Add in the almond milk and pulse until a dough-like consistency forms. If the dough is not sticking together, add more cashew butter to the food processor and pulse.
Roll the dough into 1” balls.
Gently roll the balls in the extra shredded coconut for coating.
The keto energy bites can be stored in an airtight container in the refrigerator for up to two weeks.
